The sea scallop shell can grow as large as eight inches in diameter. The edible white muscle can reach as large as two and one-half inches in diameter. Scallops are graded according to count per pound: U/10; 10-20 per pound; 20-30 per pound; and 30-40 per pound. Scallops are harvested by dredging in deep offshore waters. For maximum freshness, all scallops are shucked and washed on the boat. Fresh scallops are then bagged and stored on ice until they arrive at the Seaford facility. Scallops that are to be frozen directly on the boat are graded prior to freezing.
